Guilt-Free Chocolate Chip Cookies

Ingredients:
1 cup chickpeas drained and rinsed
¼ cup peanut butter
⅓ cup oat flour
⅛ cup + 1 tablespoon coconut flour
1 egg
2 teaspoons vanilla extract
¼ cup + 3 tablespoons maple syrup
½ teaspoon baking powder
½ teaspoon baking soda
2 pinches of salt
½-1 cup chocolate chip morsels
Steps:
Preheat oven to 350 degrees.
2. After rinsing chickpeas, place them in blender with maple syrup, egg, vanilla extract and blend well.
3. Combine all dry ingredients in a bowl and stir with spatula till well combined.
4. Add the wet ingredients to the dry ingredients, including the peanut butter and mix together well with spatula.
5. Add chocolate chips and mix well.
6. Spoon out cookie dough onto baking tray with parchment paper.
7. Bake at 350 degrees for 13-14 minutes.
8. After taking cookies out of the oven, let cookies rest 2 minutes and transfer to cooling rack. Enjoy!
